Ottolenghi sells the following ingredients - no doubt the secret to their great salads.  Verjuice - the juice from unfermented grapes.   Dukkah of various seeds.
 Pomegranate Molasses
 Tahini
 Seeds for salads
Lemon salt and Lemon Myrtle salt

Alice in Wonderland Cake Tables

Great Cafes is launching a competition for the best 'buy with your eyes' cafe cake table inspired by a comment from foodie Jason Danciger, new F&B Director at the Garden Centre Group, at a recent garden centre catering conference of his wish to create "Alice in Wonderland" cake tables.  Email entries to me.  Still the best I have seen is Ottolenghi - who can do better?

Ace Display

Ottolenghi's flagship cafe in Islington - still No 1.

Ottolenghi's salad display - as good as their pastry presentation. Big, bold platters of glistening innovative salads at differing heights just selling themselves. Buy his books to get inspiration. Our clients are increasingly doing so and saying Ottolenghi is their benchmark. We agree.

Toasters on the Table

I tried this one years ago in a City Corney & Barrow and the traders loved it.  This is Ottolenghi's Islington flagship cafe at breakfast.  Hot toast the way you like it - great idea.

Salad Bars have Moved On

Large platters of interesting combinations dressed to serve - salads have moved on from iceberg and coleslaw.  Check out Ottolenghi and his cookbooks.
